How are Loire sparkling wines produced?
Sparkling wines from the Loire are made using the traditional method (as in Champagne), which preserves the wine's fine, elegant bubbles while preserving its aromas. After an initial fermentation in vats or barrels, the wine undergoes a second fermentation in the bottle with the addition of a liqueur de tirage (a mixture of sugar and yeast).
It is this stage, called "prise de mousse", that naturally creates the bubbles! The wine is then matured on laths for several months (minimum 9 months for a Crémant de Loire, 12 months for a Vouvray, for example), developing complexity and finesse.
The final riddling and disgorging removes the deposits and, if necessary, adds a "liqueur d'expédition" to adjust the style (brut, demi-sec, etc.).
What dishes go well with sparkling wine?
Loire sparkling wines are perfect as aperitifs, but also to accompany seafood, fruit desserts or light dishes such as sushi or a warm goat's cheese salad.
